Bai Mu Dan White Tea

Tasting Notes: Nutty, Savory-Sweet

The quality of a true Bai Mu Dan white tea can be seen in the leaves. The young leaves, known as buds, are long, thin, and covered in white, downy hairs. The larger leaves are crinkly with one side a crisp green and the other covered in tiny white downs. A quality Bai Mu Dan will also have an infusion that glows with a pale, golden hue offering a sweet, peachy, floral aroma. Not only is the flavor a bit nutty, but you’ll also taste subtle notes of cantaloupe, fresh wildflowers, and steamed green beans. Each cup is herbaceous with hints of thyme balancing both the sweet and the savory.

Savoring the Experience:

Go for mellow and slightly sweet when you pair this tea. You can lean toward the savory-sweet end of the spectrum with sticky rice dishes or roasted chestnuts. Or you can go into slightly sweeter territory with waffles and whipped cream, tapioca pudding, or Asian red bean sweets. Remember, mellow, slightly sweet.

Fun Facts:

The Chinese began processing white tea in 1857 and began exporting the tea worldwide near the end of the 19th century. While the two world wars put a damper on white tea’s popularity, it has recently regained its allure in the West thanks to a few studies showing white tea’s antioxidant-rich health benefits.
